Ingredients

1 tablespoon olive oil
1 onion, thinly sliced
2 cloves garlic, minced
8 ounces wild mushrooms, sliced
4 cups vegetable broth
1 bunch kale, stems removed and leaves chopped
Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes.
- Add the minced garlic and sliced wild mushrooms to the pot. Cook for another 5-7 minutes, until the mushrooms are softened.
- Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 10-15 minutes to allow the flavors to meld together.
- Stir in the chopped kale and cook for an additional 5 minutes, until the kale is wilted.
- Season the soup with salt and pepper to taste.
