Quick and flavorful, Easy Saucy Ramen Noodles satisfy weeknight cravings in minutes with a rich, savory sauce.
Ingredients
2 packs of instant ramen noodles
2 cups of water
1/4 cup of soy sauce
1 tablespoon of sesame oil
1 tablespoon of honey
1 teaspoon of minced garlic
1 teaspoon of grated ginger
1/2 cup of sliced mushrooms
1/2 cup of sliced bell peppers
1/2 cup of sliced carrots
1/2 cup of chopped green onions
2 boiled eggs (optional)
Sesame seeds for garnish
Instructions
- In a large pot, bring 2 cups of water to a boil. Add the instant ramen noodles (without the seasoning packets) and cook according to the package instructions. Once cooked, drain and set aside.
- In a small bowl, mix together soy sauce, sesame oil, honey, minced garlic, and grated ginger to make the sauce.
- In the same pot, add the sliced mushrooms, bell peppers, and carrots. Cook for 5-7 minutes until the vegetables are tender.
- Add the cooked noodles back to the pot with the vegetables. Pour the sauce over the noodles and vegetables, and toss everything together until well coated.
- Serve the saucy ramen noodles in bowls. Top with chopped green onions, boiled eggs (if using), and a sprinkle of sesame seeds for garnish.
Notes
Feel free to customize the vegetables in this dish by adding in your favorites such as broccoli, snap peas, or baby corn.
For extra protein, add in cooked chicken, shrimp, or tofu.
Adjust the sweetness and saltiness of the sauce to your preference by adding more honey or soy sauce.
This recipe is easily adaptable to be made vegan by omitting the eggs and using a plant-based protein option.
