Ingredients
1 1/2 pounds beef stew meat, cubed
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 potatoes, peeled and cubed
1 can (14.5 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
4 cups beef broth
2 tablespoons tomato paste
1 teaspoon paprika
1 teaspoon cumin
Salt and pepper to taste
2 tablespoons vegetable oil
Instructions
- In a large pot, heat vegetable oil over medium-high heat.
- Add beef stew meat and brown on all sides, about 5-7 minutes.
- Add onions and garlic, sauté until fragrant, about 2 minutes.
- Stir in carrots, potatoes, diced tomatoes, kidney beans, beef broth, tomato paste, paprika, cumin, salt, and pepper.
- Bring the stew to a boil, then reduce heat to low, cover, and simmer for 1 1/2 – 2 hours or until meat is tender.
- Adjust seasoning with salt and pepper if needed before serving.
