4 bone-in, skin-on chicken thighs
Salt and black pepper, to taste
2 tablespoons olive oil
8 oz cremini mushrooms, sliced
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 tablespoon butter
Fresh parsley, chopped for garnish


Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken thighs skin side down and cook for about 5-6 minutes until golden brown. Flip and cook for another 5 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add mushrooms and garlic. Cook for about 4-5 minutes until mushrooms are golden and garlic is fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 5 minutes.
  5. Stir in heavy cream and dried thyme. Bring to a simmer and let it cook for another 5 minutes.
  6. Add the chicken thighs back to the skillet and let them cook in the sauce for about 10-15 minutes until the chicken is cooked through.
  7. Stir in butter until melted and well combined.
  8. Serve the chicken thighs with creamy mushroom garlic sauce over rice, pasta, or mashed potatoes. Garnish with fresh parsley and enjoy!
